Ginger Tofu

Chop lots of vegetables:

Grate 2 to 6 cloves of garlic and a generous amount of fresh ginger.

In a large wok, saute onions for a couple of minutes in oil, then add green peppers for a couple of minutes, then add hardier veggies, then other veggies. Finally add the garlic and ginger. At some point, pour in some white wine (Rhine or similar), and soy sauce (probably around a half cup). Add hot sauce to taste.

Meanwhile, in a separate pan, brown crumbled or diced extra firm tofu.

Add one 15 oz can of chopped tomatoes to the wok, and a second can of the same or crushed tomatoes.

Stir in the tofu, and let simmer for awhile (or until you can’t stand it and start eating).
