Quinoa Lime


Rinse 1 cup of quinoa thoroughly in a sieve under cold running water, tossing a few times to make sure all the grains are rinsed. Bring 2 cups of water to a boil, add salt if desired and stir in the rinsed quinoa. Reduce heat and simmer, covered, for 20 minutes. The grain, when cooked, should not be mushy, and the tiny spiral of the germ will be visible.


Chop:

 

       medium onion

       ½ green pepper

       red pepper


Saute the vegies in olive oil.


Grate in a small block of fresh ginger.


Add:

 

       quinoa (from above)

       salt

       hot sauce

       white wine (Rhine, 1/4 cup)

       juice of 3 key limes


After heating, add a deseeded, diced tomato.
